Stir Plates & Yeast Starter Guide

A stir plate is one of the most effective tools a homebrewer can use to improve fermentation performance, increase yeast activity, reduce lag time, and produce cleaner, more consistent beer.

Whether you brew with White Labs yeast, Wyeast smack packs, or dry yeast packets, a properly prepared yeast starter helps you pitch active, healthy yeast into your wort before fermentation begins.

Why Use a Yeast Starter?

Many home brewers believe that increasing yeast volume is the main reason for making a yeast starter. While yeast volume does increase, the real advantage is pitching actively growing yeast into your wort.

Starter Ingredient Reference

Basic Stir Plate Starter Process

  1. Start your yeast starter 2 to 3 days before brew day.
  2. Measure the proper amount of DME or LME using the reference chart.
  3. Boil the extract and water for at least 10 minutes.
  4. Cover the flask opening with aluminum foil and cool to room temperature.
  5. Place the starter on the stir plate and run it at high speed for about 10 minutes to pull oxygen into the starter.
  6. Slow the stir plate until the vortex is less than 1/2 inch tall.
  7. Pitch the yeast and let it spin until brew day.
  8. On brew day, swirl the starter and pitch it into the cooled wort.

White Labs Yeast

A stir plate starter helps reduce the 2 to 3 day lag time that can happen with White Labs yeast and gives you an active culture before pitching.

Wyeast Smack Packs

Wyeast packs can benefit from a starter because the stir plate helps build active yeast volume before brew day.

Dry Yeast

Dry yeast is convenient and affordable, but a starter can still improve activity, consistency, and fermentation performance.

Important Brewing Notes

  • You do not need to match your starter to your beer's starting gravity.
  • A loose foil cover is usually enough because active yeast produces CO2 pressure.
  • Do not tightly seal a jar or flask during starter activity.
  • Borosilicate glass is recommended if heating directly in the flask.
  • Hold the stir bar in place when pouring so it does not fall into the fermenter.
